company pot roast

The Hustons have given us some leeks from their garden. We have never had leek before. Looking up recipes for leeks, which are mostly leek and potato soup. We are not big on soup, but then I found this pot roast recipe by Ina Garten. It took me four hours to make this. By the time dinner hit the table, it was ten o'clock already. My poor family was waiting and was getting sleepy. Fortunately, it turned out great. Eli even ate the meat. Whenever he eats red meat, if it's not ground, he will chew it and spit it out. He actually loved this meat and ate most of it. Peter loved the gravy. He said it's not like any pot roast he has had before. I have to agree. It's a great way to incorporate veggies so kids will love it. The gravy is just puree of the stock the pot roast was cooked in, which included carrots, celeries, leeks, onions, and tomatoes. Although the leek flavor was kinda lost in the dish, I was able to smell the leek while preparing it. It smells like green onion to me, which I like.

I have been waiting to go to the water works park since spring came around. We love going there when the crab apple trees are blooming. It's like a magical story book place. They have one of the world's largest collections of crab apple trees.
